Structure-functional associates of exopolymers of probiotic bifidobacteria and lactobacilli

Own results on exopolymeric substances (EPS) of industrial strains of lactobacilli and bifidobacteria (ingredients of probiotics) of human origin are summarized. Using electrophoresis in polyacrylamide gel, blotting, fluorescent staining and fluorescent detection in regime of live imagination, screening associates of EPS and proteins is presented. The combined system of such associates and their physicochemical and some biological properties are described. The leading role of lectin-like proteins in assembling and stabilization of such associates is established. The proposed approaches allow evaluation and prediction of production, consumption and degradation of EPS associates. The results indicate complementarity potential of using bifidobacterial and lactobacillary EPS in the design of mixed synbiotics, complex and systemic natural antimicrobial probiotic effectors.
