Preserves, sterilized canned from meat of marsh frog

This article is devoted to the actual problem in rational use of new materials raw in the food industry. And described possibility of manufacture preserves, sterilized canned from unconventional protein material of amphibian species meat (marsh frogs - Rana ridibunda). In the article, briefly described manufacturing technology of food products from marsh frog meat. Presented results of qualitative research with prototypes: organoleptic, physicochemical; changes of biochemical parameters during preserving storage: buffer value, formolnotitruemy nitrogen; microbiological safety parameters of canned preserves and sterilization in compliance with sanitary rules and regulations. The given data are the results of research, which indicated possibility of using marsh frog meat (Rana ridibunda) as an industrial material raw for the manufacture new types of delicatessen products: preserves, sterilized canned.
