The article presents data on the determination of the quantitative content of some biologically active substances in the leaves, cortex and seeds of Morus nigra L. growing along the Erica Izbnoy in the vicinity of Ilyinka village in the Ikryansky District of the Astrakhan Region. With the use of spectrophotometry and chromatometry methods were founded, that in the seeds of Morus nigra L. are 37.2% of proteins, 4.9% of reducing sugars, 4.1% of nonreducing sugars, and 26.1% of fats. By use the method of complexometric titration the quantitative content of hydrolysable tannins were determined. The content of hydrolysable tannins in the aqueous-alcohol extract of the cortex of Morus nigra L. was 6.8 %, in the aqueou-alcohol extract of leaves 5.2%. In the course of the experiment on the quantitative determination of flavonoids, certain technological parameters were identified that allow increasing the content of flavonoids in the extract. The amount of flavonoids in the aqueous-alcoholic extract of the leaves of Morus nigra L. was 3.9% in terms of routine when extracted with 40% ethyl alcohol; in a water-alcohol extract of Morus nigra L. cortex 1.0% in terms of cynaroside when extracted with 50% ethyl alcohol. The content of ascorbic acid in leaves and seeds of Morus nigra L., determined by titration with 2,6-dichlorophenolindophenolate sodium, was 121.4 and 59.7 mg per 100 g of dry matter, respectively.
